In 1871 the Great Chicago Fire conflagration burned the City of Chicago to ashes. The fire’s widespread blaze was aided by the city’s use of Wood as the predominant building material. When heroic firefighters arrived, the fire had grown and spread to neighboring buildings leaving nothing but smoke and ash. The flame eventually crossed the river burning down the roof of the cities waterworks department. Within minutes, the interior of the building was engulfed in flames, and the building was destroyed. With it, the city's water mains went dry, and the city was helpless. Modern-day historians say a major contributing factor to the fire's spread was a meteorological phenomenon known as a fire whirl. Despite the fire spreading and growing rapidly, the city of Chicago continued to battle the inferno. To symbolize the American Chicago Firefighters, a bronze sculpture of stylized flames, entitled Pillar of Fire, was created.

After the debris settled, migrants flocked to the city after the Great Chicago Fire burned the city's heart to the ground. They brought with them their culinary traditions, including a love of sausages and smoked meats. Many of these new settlers came looking for work from Eastern European immigrants to Southern State African Americans. Finding factory jobs in the Union Stock Yard or “The Back of Yards” is based in Chicago's South Side. The meatpacking district in Chicago formed around 1865 but peaked in 1924. Helping Chicago become known as the "hog butcher for the world" and the American meatpacking industry center for decades. More meat was processed in Chicago than in any other place in the world. Stockyards drove significant commercial growth in Chicago as a major railroad center. Butchers and small meat packing companies centered around this area. The number of small businesses significantly increased to process the flood of livestock being shipped to the Chicago stockyards. The goal was to butcher and process the livestock locally rather than transferring it to other northern cities for butchering and processing. The site had 2300 separate livestock pens, room to accommodate 75,000 hogs, 21,000 cattle, and 22,000 sheep at any one time. Hotels, saloons, restaurants, and offices for merchants and brokers sprang up in the growing community. Americans of all classes found a greater variety of more and better meats on their tables, purchased on average at lower prices than ever before. The Union Stock Yard fire of 1934 burned almost 90% of the stockyards, and this fire was seen as far away as Indiana. The Yards reopened the following Sunday and proved once again Chicago was able to rise from the ashes.

 

Chicago Barbecue is built on ribs and is rooted in the African American migrations from the Mississipi Delta to the Southside. For many Eastern European immigrants, ribs were often simmered in a pot for hours with cabbage, potatoes, and onions, making a hearty stew. Southern African-American and Eastern Europeans, and their descendants, were always left the cheapest cuts of meat. So they combined European smoking, Southern African-American open pit techniques, and sweetly spicy sauces made from tomatoes and hot peppers. Barbecue pork ribs, local delicacies such as rib tips, and sausage have always been the most popular items. Many of these early pit masters cooked in open pits in the ground. As health laws increased around the same time, and meatpacking standards became federal. Barbeque popularity grew from the Ground to the Grill. Local Chicago innovators in these communities created the Chicago-built Aquarium Pit and Kettle grill.
